西红柿采样部位及时期对番茄红素含量的影响 预览 被引量:2

Influence of Sampling Time and Position on the Lycopene Contents in Different Tomato Cultivars

摘要 通过研究采样部位及采样时期对不同品种西红柿内番茄红素含量的影响,考察西红柿内番茄红素含量的影响因素。结果表明,西红柿品种、采样时期和部位均对西红柿内番茄红素的含量有影响。番茄红素含量大小顺序为红色樱桃型小果品种〉红色大果型品种〉粉色大果型品种;西红柿果皮内番茄红素含量大于果肉的含量;果皮内番茄红素的合成速度大于果肉;番茄红素合成速度最快的时期在变色期至红熟后期,其次在坚熟期至完熟期,红熟后期与坚熟期的含量相差不大。 The influence of sampling time and position on the contents of lycopene in different cultivar tomato(Lycopersicon esculentum Mill) was studied. The result showed that there were influential in the contents of lycopene in different cultivar tomato, different maturity stage and different sampling site of tomato. The contents of lycopene in cherry tomato cultivars were significant more than that in the large-fruit type tomato cultivars. The contents of lycopene in red-big tomatoes were more than that in the pink ones, but not significant. The contents of lycopene in tomato peel were more than that in tomato pulp. The synthesis rate of the lycopene in tomato peel was faster than that in tomato pulp. The synthesis rate of the lycopene in post-red-ripe stage was the fastest, and then in over-ripe stage. The contents of lycopene in post-red-ripe stage were almost as much as that in over-ripe stage.
